My Snack

Have been craving for kuehs lately. Guess I've gain some weight these few days..hee hee..;p
Well what's new today? Nope, its just the kueh koci I've posted sometime ago. But I've used some "Bunga Telang" from a friend which I've treasured it for quite sometime. Thanks alot Sonia for the flowers...:)


Okay what I've done to the kueh? I've pound some bunga telang then mix with some water and strain to get the blue colouring. The colour looks really blue and lovely. Somehow, the result was not what I expected..;p Guess I have to used potatoes instead of pumpkins..:)



See what I mean, then beautiful blue has become greenish when mix with the pumpkin..*sigh*.
Texture still good but the outlook is abit weird i guess..haha! Anyway all are natural colours..:)

Eventhough the shape and colour are not so attractive, but the filling was superlicious..:) Juicy coconut with the fragnant of gula melaka....yummy!

Gula Melaka Fatt Goh

Hi there! How's everyone doing? Me....good! Got myself some recipe books last 2 days.
Here's something I'll like to share with you from one of my new collections. Somehow, some changes have been made to this recipe, hope eveyone will like it..:)

Here's my lovely babies.......;p




Ingredients: (makes 12)
(A)
1 egg
125g castor sugar
300g plain flour
1 tsp Double Action baking powder
180ml water

(B)
3 tbsps Gula melaka (cooked the gula melaka with some pandan leaves to get thick syrup)

(C)
1 tbsp Instant yeast
1 tbsp sugar
60ml water

Method:
~ Mix ingredients (C) together and rest for 10 minutes for fermentation.
~ Whisk egg and sugar till creamy (with mixer)
~ Add water and mix well slowly (by hand)
~ Add in flour and baking powder gradually and mix well.
~ Add in ingredient (C), stir well until become smooth batter.
~ Divide batter into 2 portions evenly. Mix a portion with ingredient (B)
~ Prepare the greased "Fatt Goh" cups, preheat in the steamer for 5 minutes before add in the batter.
~ Remove the cups from steamer, spoon in gula melaka batter then follow by original flavour batter, form a marble texture with stirring with chopsticks.
~ Steam in preheated steamer at high heat for 20-25 minutes.

** The gula melaka can be replaced with other flavours as desire. ( eg: pandan, chocolate..etc.)

** And also do use a deeper mould to steam so that the cakes may "smile" nicely after steaming. Too shallow and wide mould won't give you the texture (top- split) because they'll have too much space to spread side ways. (Mine was not all smiling nicely, guess I have to go get some proper mould...;p)




The texture? Its soft and fluffy. Really good! Note there's no coconut milk added, and yet the cakes still can bring out the taste of gula melaka. I can say this is quite healthy (but ignore the sugar & yeast..haha!)



I'm quite happy with the result actually. And its all gone by now...:)..CHEERS!!

Fermented Beancurd Pork Burgers

What's for dinner? Something special for my girl today. Sounds like western, but it taste like asian..hee hee..;p
Got this from my collection.."Hawkers's Fair". Love this sauce and I'll like to share it with you..:)





To prepare the sauce is quite easy. All you got to do is chopped all the ingredients and mix.

Ingredients for sauce:

3 tbsp chopped Garlic
3 tbsp chopped shallots
1 tbsp chopped ginger
5 pcs fermented beancurd, mashed
1-2 tbsps sugar
80-100ml water
4 tbsps cooking oil

Method:

~ Heat up oil, saute chooped garlic, shallots and ginger until fragnant.
~ Add in fermented beancurd and stir well.
~ Add in sugar, water and bring to boil.
~ Remove from heat.

** Sauce and be store in refridgerator for 1 month.



Ingredients for the burger:

300g minced pork
5 chopped waterchestnuts
1 small chopped carrot
3-4 tbsps fermented beancurd sauce
1 tbsp cornflour

Method:

~ Combine all ingredients together and mix well.
~ Divide into few portions and shape into burgers.
~ Heat up 3-4 tbsps oil, put in burgers and pan-fry until golden brown at medium heat.
~ Dish up and serve with some tomato or chilli sauce.

My 1st Semester School Trip

Its almost end of the 1st school semester break. Where have you been for this short break?.
I've visited Singapore with my daughter. Its not the 1st visit but it has been 17 years since my last visit to this wonderful country.

We had a wonderful time and a cosy place to stay...at my uncle's house..:) But too bad, this trip was really short. Only 4 days 3 nights...and my daughter started missing the place and relatives already.

We had a great time visiting the Zoo, Sentosa and few shopping malls. And theres lots more places we haven't visit. Probably have to plan another trip there again. Here's some of the food i tried that I'll like to share with you....^-^


The very 1st day, my uncle brought us to a restaurant "Big Eater 大食家海鲜"

The main dish i had that day was this delicious 螃蟹米粉 aka XO BeeHoon.....

We also tried some "Ramen" at Jurong point..:)




Woo.....this is a must try at Vivo City. A restaurant named The Asian Kitchen.

And the last but not least....the Indian restaurant @ Raffles City Shopping Centre.

We had a buffet lunch before we headed to the airport. I was so full after this lovely and delicious meal, and I actually didn't take my dinner on that day..:)

These were what on my plate...hee hee! The saffron rice is awesome....I can't really talk while I'm eating..haha! Too delicious to talk! The sauces of each dishes....I'm speechless!
If I'm going for another trip to Singapore, these restaurants are my compulsory visit in my list!

Wonderful Recipes

Bake bake bake....the whole afternoon i spent baking in the kitchen today. I just can't wait to try out some of my dear friends' recipes. So here they are.....:)



HoneyBeeSweets Chocolate Banana Muffins.



Its really moist and literally melt in your mouth. My daugther loves it so much, and she just can't wait to try. So she took one before her dinner instead!

This was a request from my husband. He wanted to try this so much after I showed him from Sonia's post and said wonder how it taste like. (Plain butter cake is his favourite!)

Cheesy Pancakes

*phew*..finally I got some time for myself after a busy day. Yeah, its a Saturday and yet it was busier than my weekdays. Busy with unfinished housework and also fully booked by my daughter's weekend activities. Its really not and easy job to take care of a child. Agree?
Me, being a mother cum driver..haha!

Okay, to start of my day, I've cooked myself a fulfilling breakfast. One of my favourite.....
Pancakes! Having miss and match with some other recipes, here's my version. And it turns out super good..:)




Ingredients:
100g Self raising flour
25g Sugar
1/8 tsp salt
75ml Fresh milk
2 egg yolks
2 egg whites (lightly whisk)
1tbsp Cornoil
4-5 tbsps Grated Cheddar Cheese

Method:
~ Mix flour, sugar and salt in a large bowl.
~ Make a well in the center of the flour, add in egg yolks, milk and oil. Stir until smooth.
~ Add in whisked egg whites into batter without beating.
~ Lastly add in grated cheddar cheese and mix well.
~ Spoon onto hot pan (without oil) to pan fry until golden brown on both sides.



Lovely! We love it with some honey and syrup. It makes me hungry again looking at the pictures..;p
I'm going to take a day off from my kitchen tomorrow, no...not even to toast a bread! I want some rest..:)

Bak-Gut-Teh and Sweet Barley Ginko Dessert

It has been a long time since I have this dish, Bak-Gut-Teh. It is one of my favourite since 3-4 years ago. I remember I don't like the smell of the soup when my mother used to cook and I felt dizzy when the herbs aroma filled the house. Then one day when my husband (used to be his favourite all times) brought us to Klang for this Bak-Gut-Teh (very famous one), and I suddenly felt in love with it..haha! I just don't know why...;p After that, I've tried almost all stalls near my area...hee hee!

Here's the one I cooked myself for dinner today. The mixture was a gift from a blogger friend, Sonia, when we met last week. I've been longing to cook this since I got it. And here is it!! When the scent of the soup filled my house, this time I really love it! haha! Its so delicious and I wonder whether I can get it from the supermarket nearby. Anyway, I'll go look for it!

Yummy yummy! Finished the whole pot in 20 minutes!....:) Will cook again next week since I've got 2 packs of the mixture., hee hee!

Another is the dessert. My favourite one too. Bought a very fresh soy milk (without sugar) from a stall nearby my office yesterday. The milk was so smooth and fresh, and I think this is good for this "Barley Ginko Soup".



Hmm..........really enjoy my dinner today. Just one thing that worries me....how am I going to lose my fat tummy weight? Hahaha!
