Lemon Cupcakes with Coffee Cream


It has been quite a long time since last post, huh?! Yup...getting lazier and lazier with anything creative but at least I do bake all the old recipes again and again. Well, time flies and its the end of July, school holiday will starts soon and I'm going to enjoy this coming holiday to the fullest...:)
Here, a simple recipe that I've got from  the 200 cupcakes by Joanne Farrow. I modified the recipe to suit my taste.


Ingredients:
125g butter
120g sugar
2 eggs
2 tbsps lemon juice
1 tbsp lemon rind
150g self raising flour
1/2 tsp baking powder
50g almond flakes

Cream:
2 tbsps Coffee paste
100g cream
50g sugar
1 egg yolk




Method:
~ Cream butter and sugar till fluffy then add in eggs and stir well.
~ Add in lemon rind and lemon juice and mix well.
~ Add in flour and baking powder and mix well.
~ Spoon into prepared cups and sprinkle the almond flakes on top of the cupcakes. Bake in the preheated oven at 180'C for 20 minutes.
~ Meanwhile melt the sugar, cream and coffee paste in a bowl (double boil), add in egg yolk and off the heat. Stir well and beat the mixture to a snooth texture, shown below.
~ Transfer the smooth cream into a piping bag then slowly pump the cream into the cool cupcakes from the center.
~ Chill the cake before serving.


Try this simple recipe for your light tea break, I'm sure you'll like it.
The texture is so soft with the zest of lemon taste. You can always ignore the coffee cream if you like, the cupcakes are as tasty as they look.

Butter Banana Cake

Hey there, how are everyone doing? We are facing a seriously hazy weather in Malaysia. Hope everyone is alright and take care, especially the young kids, old folks and expected mothers. Drink more water, take more fruits and vegetables and stay indoors as you can.
Bake some simple yummy cakes for tea or breakfast like what I just did.....^^



Ingredients:
250g butter
180g sugar
3 eggs
300g bananas (mashed)
1tbsp lime juice
300g self raising flour
4 tbsps milk powder


Method:
- Mix the flour and milk powder together.
- Beat butter and sugar till light and pale.
- Add in eges one at a time.
- Add in masged bananas , mix well.
- Add in lime juice follow by the flour mixture at low speed.
- Pour mixture into a 9" ring pan and bake at 160'C for 45 minutes.
 Texture was very good, it stays soft up to 3 days. I like this so much compare to those with cornoil.
My family loves this recipe and they even ask me to bake again!!


From the pictures above you can see the texture clearly, soft and fluffy right?
Oh...the side was crispy too, of course getting softer another day but it still good!

Chunky Chocolate Cookies

Its been awhile since last post huh.....well I admit I'm far too lazy to bake lately..hehe! Reason?...don't ask, just lazy..:p
Alright since I'm not going to explain, why not just go straight to what I want to post today. Actually this was baked last month with my little girl, and everyone has been asking for this recipe. So I have no excuse to post it now for all my friends to share.


IIngredients:
1/2 cup butter
1tsp vanilla essence
3/4 cup fine sugar
1 egg
1.5 cup plain flour
1/2 tsp baking soda
1/2 tsp salt
1 cup cooking chocolate cut into chunks



Method:
~ Cream butter with sugar and vanilla essence.
~ Add ehg and beat well.
~ Add in flour, salt and baking soda.
~ Stir in chunks of chocolate and mx well.
~ Wrap with cling foil and freeze till firm for 15-20 minutes.
~ Drop teaspoonful into grease cookies sheet.
~ Bake for 15-20 minutes or till edges turn lightly brown at 180`C.

Chilled Oreo Cheese Cake

It's a great day with good mood because my stress has finally over!!!..haha!! Why?! Maybe you'll say I'm crazy....:p It was a "stress off" day just because my daughter's school exam has finally over...LOL!! It seems like I'm the one who is sitting for the exam huh!! Anyways, all done and I can relax and start to bake alittle more and go shopping!!
Here the first cake after the stressful days....an Oreo Cheese Cake for a dear friend's son's birthday.
We had a simple but a very happy and relax celebration for the boy....:))


Very creamy and delicious, and most of the kids asked me whether it's an ice-cream cake!! So you can imagine how's it taste like. It does taste exactly like the McDonald's Oreo Mcfluffy!! The kids love it!!


Here'e the recipe,

Ingredients for the crust:
1/4 cup butter
1/2 cup fine sugar
1 tsp vanilla essence
1 egg (size B)
3/4 cup plain flour
1/3 cup wholemeal flour
3 tbps ground oreo biscuits
1/4 tsp baking powder
1/4 tsp salt

- Beat butter, sugar and vanilla essence together till well mix.
- Add in egg and mix well.
- Add in the rest of the ingredients and beat well.
- Press into a 6" round ring pan.
- Bake at 180'C for 20-25 miunutes or till done. Set aside till cool.



Ingredients for the filling:
1 tbsp gelatine + 1/4 cuphot water
375g cream cheese
1/2 cup condensed milk
1 cup dairy cream
3 tbsps ground oreo biscuits

- Mix gelatine with water then bring to double boil until the gelatine are all well melted. Set aside.
- Beat cream cheese, condensed milk and cream till smooth.
- Add cooled gelatine and beat in ground oreo biscuits.
- Pour into the cooled crust and refrigerate till firm.
- Decorate with oreo biscuits at the side and top as you desire.



The picture of the sliced cake was not too clear and it was almost melted by the time we cut the cake. So it is the best to serve right after taking out from the fridge. Hope you guys like it ya!

Steamed Wholemeal Banana Mantou 麦粉香蕉馒头

Dear readers, I'm back with a simple recipe. I'm not doing much in my kitchen lately because I'm busy with my daughter's scedule. Her school exams are coming soon, and as usual, I'm worry and stress...:((
Being stress in my daughter's exam is really useless, I know but what to do, it just comes naturally. I guess all mums out there are the same...hehe!

Right, here's a really simple recipe I created, hope you like it as much as I do.

Steamed  wholemeal banana mantou, 麦粉香蕉馒头.

 Ingredients:
400g Pau flour (low gluten flour)
100g wholemeal wheat flour
2 tsps double action baking powder
11g instant yeast
120g castor sugar
40g shortening
100g mashed bananas
180-190ml water. (may not need all)


Method:
- Mix all ingredients together except water with an electric mixer using a dough hook.
- Add in water slowly and continue to mix at high speed until a soft dough form.
- When the dough form, stop adding anymore water and continue to mix at high speed for about 5 minutes.
- Transfer dough onto flour dust surface and divide into 50g small pieces.
- Roll out dough as shown above.
- Fold up like the above and place on a cut baking paper.
- Arrange in the steam bamboo tray and let them double the size before steaming. (about 15 minutes)
- Steam at high heat for 12-15 minutes.



These mantou are so soft and fluffy that you can just eat it by its own. Spread some kaya or jam, they taste just as good as you want.


Look at the inside, don't they look soft and fluffy to you? With the light banana aroma, these buns are just too good to resist.

Lemon Bailey Slice

Hi, I'm back with a simple recipe to share...^^
This was done last week with no regret. Very light and delicious with my favourite baileys in it. 
It happened when I found a lemon in my fridge, then I did have enough eggs for a simple sponge so this cake was done in 30 minutes...haha! And it was all gone in an hour too...fast, huh!! 


Here's the recipe,

I used the swissroll sponge recipe here with added lemon zest and lemon juice.
Please refere to the recipe here2 tbsps lemon juice was added into the 55-56g of milk, with extra 1 tbsp lemon zest added into the batter.


Whip some (about 60g) fresh cream or dairy fresh cream then add 3 tbsps bailey cream into it and mix well.
Cut the sponge into half. Spread the cream over the cooled sponge and layered with another half of the sponge. Refrigerate the cake before slicing.


I must have another one this week! This is simple too nice to eat and yes, it was simple too easy to make..;p

Yam & Sweet Potatoes Sweet Dessert 炸年糕

Hi all, how are you guys? I've been missing from here since last year December, and I hope I'll get to blog more this coming days to share my recipes. 
Here's a sweet dessert that I made last month, and it tastes really good. I'm not so sure what this sticky sweet kueh called in English, in mandarin we call it "nian gao" (年糕.) Which this kueh we only eat it during Chinese New Year.
I've fried it with a different way this time with mashed sweet potatoes and yam. Have a look at the bottom, it was very easy.


Very crispy outside and soft & sticky inside. Really yummy!!

Recipe:
100g plain flour
alittle salt to taste
1 egg
about 50-60g water

** mixed all the ingredients above with the water addedslowly until you get a sticky starchy flour paste. set aside.

"nian gao" 年糕 - cut into stripes
*60g yam, steamed and mashed
*60g sweet potatoes, steamed and mashed

**the amount of the yam and sweet potatoes depends to individual.
* wrap the 年糕 with the mashed yam and sweet potatoes like shown below.
* deep fried in some hot oil at medium heat.






I will definitely stick to this recipe next year when I get this kueh. I was really surprise it turned out so nice and it was well received by my family.

The Wedding Cakes

Hi everyone..I'll like to wish everyone a Happy New Year and good health in this "U-LA-LA" snake year...^^
I've been missing since last November...LOL, busy with the holidays and now busy with my daughter's school scedule and Chinese New Year cookies. Bet everyone are facing the same stress here...huh!! What cookies to bake this year, things are not ready and time has been running out...gosh! Anyway, after these busy weeks, we'll have a fun holiday again and when that comes, time flies...happy moments are always too short...;p
Alright now, before any cookies (btw, I'm only going to make some old traditional cookies like last year) here are two different wedding cakes I've done last December.

The first one here are was 5 tiers wedding cake for a good friend (she's a local artist). All were styrofoam covered with white vanilla fondant and 99 gumpaste purple tone roses. This cake was delivered to the beach which took me almost two hours to reach and was too heavy for me to carry...haha! Anyway, it was delivered in good condition...No CRACKS!!.."phew"



The second one, this was only a small 8" butter cake covered with vanilla white fondant and  two cute chinese wedding couple sitting on the cake. Simple one, for my dearest cousin brother's wedding. Yeah, they love it!!
My finishing was still very rough, guess I still need alot lot more practice.


The idea of these two couples came from my friends, my dear old school mates, whom now doing their home bake business in Australia. Thanks my dear friends!!
