Grilled Paprika Chicken with Baked Cheesy Potatoes and Mushrooms

So lately I've been baking and cooking all the old recipes, craving for all the old stuffs. My family has been asking why am I not baking or cook any delicious food that they like last time, so I just bake whatever they ordered..hehe! I'm not lazy but no new recipes lately..haha!
Anyway, here is one of the old ones which I grilled long time ago for a Christmas party, but with a new side dish which I think I should share with you. A delicious and simple side dish which you should try.

Baked potatoes and brown mushrooms with pizza topping cheese. At the beginning I just thought of baked the potatoes but my daughter requested some mushrooms. So I just mixed all these 3 ingredients together and guess what!....They loved it!!

Ingredients:
4 Soft potatoes, cubed
1 pck Brown mushrooms, halved
salt, black pepper, olive oil (to taste)
Pizza topping cheese (as desire)

~ Mixed all ingredients together then spread the cheese topping over the potatoes and mushrooms.
~ Bake at 200'C for 20-30 minutes or until golden and crispy. Served hot!

*served 4

For the grilled chicken recipe, please refer to my old post, Paprika Grilled Chicken.
This grilled chicken was my best among the others. The chicken drumsticks were bursting with flavors!

Oh the side dish, please remember not to add too much salt as it will be too salty when served with the yummy grilled chicken. Try try try!!! I'll like to know about your comments...:))

Cheers!

Shepherd's Pie or Reese's Pie???

Hi all, here's another recipe that I promised to share. This was the one that I've tried the other day together with the peanut kueh. This was my first time trying a shepherd's pie but somehow I'm not sure how is the actual recipe tastes like....;p This pie came to my liking when I saw my aunt's (Venorica's Kitchen) post last week. Its so easy and something different to serve for dinner instead of noodles or rice we used to have. (My daughter used to complain that she's bored with rice and noodles...haha!)

Well, if you are wondering why I decided to have such a title for this post, this was because of 2 reasons. First, I never try to eat a shepherd's pie before and secondly I've changed the ingredients to suit my very own taste. But of course this was inspired by my aunt...:)
Ingredients:
200g minced chicken fillets
6 small local potatoes (yellowish)
50g white button mushrooms (sliced)
** mozzarella cheese (depends on your liking, I used quite alot)
100-150g carbonara sauce (I used Prego's brand)
1 tbsp salted butter

Method:
~ First marinate the minced chicken fillet with some dried bazil leaves, alittle paprika powder, alittle black pepper and a pinch of salt for at least 30 minutes.
~ Cooked the potatoes until soften and mashed. Add in butter and mix well.
~ Saute the minced meat with 1/2 tbsp olive oil until fully cooked and add in the mushrooms. Stir well, off heat.
~ Then add in carbonara sauce and mix well. (If you find its too watery, then you may use less)
~ Spoon the cooked meat into prepared tray, top with cheese then followed by mashed potatoes.
~ Sprinkle some cheese on top of the potatoes if desire.
~ Bake at preheated oven at 200'C for 25 minutes. Serve hot!

This recipe served a 8x4" and a 6x2" trays. Can you believe that my daughter finished up the small one and asked for more...;p Oh she just love carbonara sauce and that's why I used that and cheese.....YUM!! Now you know why I named such title here...LOL!!!

Cheers!!

DIY Bread Pizza

Lazy to cook? Maybe you can try this!!
I always prepare lunch for my daughter before she goes to school but yesterday I was too lazy to cook and I have run out of idea what to cook for her. It seems everyday served her with rice and noodles are boring. Then she suggested that we order a pizza for her lunch. After a few thoughts, I was thinking why not she make her own pizza instead! She was so excited and looking forward to the bakes...hehe! Since I want to make it simple, we used some white bread instead of making her the pizza dough...;p Well, it turned out great, and she loves it!!!

Okay, the preparation....I only prepared some white bread, some pasta tomato sauce, a small onion (diced), some luncheon meat (diced), sausages and shredded mozzarella cheese. First she rolled the bread into thin slice...real thin one so that it'll be very crispy after bake.
(Shown below)
Then...spread spread spread with the pasta sauce!

Then she added all the prepared ingredients, well she doesn't like the onion much..haha! After the 1st slice, she came with the idea of making faces on the pizza..:) Kids always like cute things..:D

Lastly she sprinkled as much cheese as she can (oh she loves cheese), and in the oven they go!
Bake that for 10 minutes at 200'C and they were ready to serve.

See the funny face (below) after baked?! ...LOL!! It was out of shape when the cheese started to melt...;p
Think your little ones may like this idea of preparing their own meal. Kids always like to do adult things..don't you agree?..hehe!

Cheers!!

Tuna Bread Pudding

Have been a busy and boring day for me today. Busy as the non-stop paper works in office, boring as the hot weather that made me so moody. To refresh myself, I went shopping!! Sounds good right? ...heehee! Well, I didn't get anything anyway but felt better. Alright, then its time to think about dinner. Wondering in the fresh market, staring at those vegetables and meat....but nothing came into my mind. But when I passed by the dry ingredients and canned food, suddenly I thought of this bread pudding. And yes!...that's our dinner tonight!

Remember my mother did this once but can't really recall what's the ingredients in this pudding. All I know is there were tuna in it. Well, as you know that bread pudding is a dessert popular in British, Mexico and others. It used to be sweet as it is a dessert. The bread is soaked (often overnight), squeezed dry, and mixed with the other ingredients. The mixture is transferred into a dish and baked. But I changed it into something different today, and it was fantastic!!! Something that I never cooked before and most of all my daughter loves it so much..:)

I made it in a very simple way and these are the only ingredients you need.
Ingredients:
4 slices of bread (cubes)
3 cups of milk
2 eggs (beaten)
2 tsps salt
Some shredded cheddar cheese
A can of tuna in oil (drained & mashed)
1 tomato (chopped)
1 green pepper (chopped)
1 onion (chopped)
a little butter cubes

Method:
~ Beat eggs and salt together and mix with milk. Set aside.
~ Greased a 8x4" rectangle tin and fill a layer of bread cubes at the bottom.
~ Sprinkle some butter cubes and follow by the mashed tuna.
~ Then sprinkle some green peppers, tomato and onions and covered with shredded cheddar cheese.
~ Lastly cover the top with some bread cubes and pour the milk mixture all over to cover the bread.
~ Bake at 200'C for 25-30 mins and serve hot.

The top was so crispy and the inside is so creamy and soft. SUPER YUMMY!!!

It taste like pizza but it was much lighter. It was so good that my daughter and I finished the whole loaf of it. Yup!! Only 2 of us!! Asked why I didn't cook this for her before since it is so delicious..;p

Trust me, it was so good that you'll eat that all up by yourself..;) It was definetely a good bread pudding for dinner. Or should I say bread pizza?...haha!

I definetely had a great day after all...Cheers!!

Our Pizza Day

My daughter has been asking when is her baking time again. Since she's so eager to bake, and okay we'll make it today. To make things easier, we decided to make pizza for dinner. "Yummy".. she said!

Here she goes, slowly and neatly folding the dough onto the tray....

...then decorate her own pizza with her favourite sausages and mushrooms...hee hee..;p

Oh and then what's she's doing? haha! We have decided to make something for dessert. Since we have some pizza dough left, here's what we did...........

Mashed the banana and add some honey into it......

Spread some melted cooking chocolate onto the pre-baked pizza dough, and then followed with the mashed banana! Sprinkle some shredded mozarella cheese and in the oven it goes.

Here is it..our Chocolate Banana Pizza for dessert!

The result is unbelievable....its super yummy! Trust me..its really delicious!!

Below is the classic style but actually its more to our own simple style then those pizza house..;p
This time I did saute some garlic with olive oil until fragnant before I add in the mushrooms. I like it that way....;)

Within 10 minutes, we finished the whole pizza! haha! Right after that we head for our "new" banana pizza...ooh, its good! My girl said she wants to make that Choc Banana pizza again very soon...haha!

Weird Sizes......

What do i mean about 'Weird Sizes"...heehee! I've made pizzas for dinner today, in few sizes...small, medium, ...and also square..haha!...and my very dear friends cum neighbour came over for dinner too. At the beginning i was so nervous cause this was the 1st time making pizza. Don't even know whether its successful or fail....then i told myself....i shouldn't invite my friends here, i don't even taste it myself yet!!! Really regret at that time.
Slowly i took it out from the oven, then took a few photos of it.....and then 'served'!
Results?!!.....Its great! Not to say its very very yummy and delicious, but seeing the kids eating one piece after another....i was so happy and satisfied...:)
I got this recipe from one of my favourite book.."Bake With Yen". I just follow the ingredients for the dough but did some changes for the tomato sauce and the ingredients for the topping. Well, you can just add anything you favour on top, right? So i did some with spicy flavour..:P

Ingredients for the dough:
250g Bread flour
140ml Cold water
1/2 tbsp Instant yeast
1 tsp Salt
2 tbsps Cooking oil

Method:
~ Mix flour, cold water instant yeast and salt for a few minutes in a mixing bowl with a dough hook, then add in oil. Mix till dough is elastic. (Knead about 10 minutes)
~ Let proof in a bowl for 30 minutes then divide the dough into sizes you prefer.
~ Flattened the dough and put on an oiled pan or pan layed with baking paper.
~ Proof the flattened dough again for 20-25minutes, pook the dough base with a fork and half bake the pizza bases at 220'C for 10 minutes.
~ Spread pizza sauce evenly over the pizza base and add topping ingredients of your choice.
~ Sprinkle some mozarella cheese on top then bake at 220'C for about 20 minutes.

Ingredients for Pizza Sauce:
1 small tin of tomato puree
1 tsp sugar
1/2 tsp salt
Some oregano and Bay leaves
3 tbsps Olive oil
2 pips Garlic
3 large onions
3 Fresh tomatoes

Method:
~ Grind the onions and garlic. Separately grind the tomatoes.
~ Heat up the olive oil,Fragnant the grounded onions and garlic, add in tomato puree and grounded tomatoes.
~ Cook for 5 minutes then add in bay leaves and oregano. Season with salt and sugar and cook till sauce thicken.
** Sugar can be more if the paste is too sour.

Well for the topping......some with sausages, chicken breast chunks (marinated with some black pepper and soy sauce), capsicum, button mushrooms, pineapples and onions.
Some was spicy...heehee! I marinated the chicken breast chunks with "Nyonya Laksa" paste which my friend gave some time ago. I just recall it was still in my fridge, so i just play with it! And the taste was great too. Of course you can just marinate with some curry powder and salt....it'll turn out perfect too.
Lastly there must be cheese on top. Mozarella cheese ...yea yea....i covered the whole pizza with it. hee hee!

Everybody was satisfied with my creation today...:) I was so happy, so i ate alot too......'sigh'..got to do exercise early morning tomorrow...;p
