Steamed Wholemeal Banana Mantou 麦粉香蕉馒头

Dear readers, I'm back with a simple recipe. I'm not doing much in my kitchen lately because I'm busy with my daughter's scedule. Her school exams are coming soon, and as usual, I'm worry and stress...:((
Being stress in my daughter's exam is really useless, I know but what to do, it just comes naturally. I guess all mums out there are the same...hehe!

Right, here's a really simple recipe I created, hope you like it as much as I do.

Steamed  wholemeal banana mantou, 麦粉香蕉馒头.

 Ingredients:
400g Pau flour (low gluten flour)
100g wholemeal wheat flour
2 tsps double action baking powder
11g instant yeast
120g castor sugar
40g shortening
100g mashed bananas
180-190ml water. (may not need all)


Method:
- Mix all ingredients together except water with an electric mixer using a dough hook.
- Add in water slowly and continue to mix at high speed until a soft dough form.
- When the dough form, stop adding anymore water and continue to mix at high speed for about 5 minutes.
- Transfer dough onto flour dust surface and divide into 50g small pieces.
- Roll out dough as shown above.
- Fold up like the above and place on a cut baking paper.
- Arrange in the steam bamboo tray and let them double the size before steaming. (about 15 minutes)
- Steam at high heat for 12-15 minutes.



These mantou are so soft and fluffy that you can just eat it by its own. Spread some kaya or jam, they taste just as good as you want.


Look at the inside, don't they look soft and fluffy to you? With the light banana aroma, these buns are just too good to resist.

Lemon Bailey Slice

Hi, I'm back with a simple recipe to share...^^
This was done last week with no regret. Very light and delicious with my favourite baileys in it. 
It happened when I found a lemon in my fridge, then I did have enough eggs for a simple sponge so this cake was done in 30 minutes...haha! And it was all gone in an hour too...fast, huh!! 


Here's the recipe,

I used the swissroll sponge recipe here with added lemon zest and lemon juice.
Please refere to the recipe here2 tbsps lemon juice was added into the 55-56g of milk, with extra 1 tbsp lemon zest added into the batter.


Whip some (about 60g) fresh cream or dairy fresh cream then add 3 tbsps bailey cream into it and mix well.
Cut the sponge into half. Spread the cream over the cooled sponge and layered with another half of the sponge. Refrigerate the cake before slicing.


I must have another one this week! This is simple too nice to eat and yes, it was simple too easy to make..;p

Yam & Sweet Potatoes Sweet Dessert 炸年糕

Hi all, how are you guys? I've been missing from here since last year December, and I hope I'll get to blog more this coming days to share my recipes. 
Here's a sweet dessert that I made last month, and it tastes really good. I'm not so sure what this sticky sweet kueh called in English, in mandarin we call it "nian gao" (年糕.) Which this kueh we only eat it during Chinese New Year.
I've fried it with a different way this time with mashed sweet potatoes and yam. Have a look at the bottom, it was very easy.


Very crispy outside and soft & sticky inside. Really yummy!!

Recipe:
100g plain flour
alittle salt to taste
1 egg
about 50-60g water

** mixed all the ingredients above with the water addedslowly until you get a sticky starchy flour paste. set aside.

"nian gao" 年糕 - cut into stripes
*60g yam, steamed and mashed
*60g sweet potatoes, steamed and mashed

**the amount of the yam and sweet potatoes depends to individual.
* wrap the 年糕 with the mashed yam and sweet potatoes like shown below.
* deep fried in some hot oil at medium heat.






I will definitely stick to this recipe next year when I get this kueh. I was really surprise it turned out so nice and it was well received by my family.
