Grilled Paprika Chicken with Baked Cheesy Potatoes and Mushrooms

So lately I've been baking and cooking all the old recipes, craving for all the old stuffs. My family has been asking why am I not baking or cook any delicious food that they like last time, so I just bake whatever they ordered..hehe! I'm not lazy but no new recipes lately..haha! 
Anyway, here is one of the old ones which I grilled long time ago for a Christmas party, but with a new side dish which I think I should share with you. A delicious and simple side dish which you should try.


Baked potatoes and brown mushrooms with pizza topping cheese. At the beginning I just thought of baked the potatoes but my daughter requested some mushrooms. So I just mixed all these 3 ingredients together and guess what!....They loved it!!


Ingredients:
4 Soft potatoes, cubed
1 pck Brown mushrooms, halved
salt, black pepper, olive oil (to taste)
Pizza topping cheese (as desire)

~ Mixed all ingredients together then spread the cheese topping over the potatoes and mushrooms.
~ Bake at 200'C for 20-30 minutes or until golden and crispy. Served hot!

This grilled chicken was my best among the others. The chicken drumsticks were bursting with flavors!

Oh the side dish, please remember not to add too much salt as it will be too salty when served with the yummy grilled chicken. Try try try!!! I'll like to know about your comments...:))

Tasty Grilled Chicken

Another grilled chicken recipe added into my list. This is also a simple one founded in a magazine long time ago (can't recall what magazine was that though), the recipe has been cut out and was all the while kept in my small note book in the drawer. Yeah...never thought of that until I tried to tidy up the drawer the other day...;p
Well, I can't think of the name of this dish, so just named it.."Tasty Grilled Chicken" will do..LOL!!
Recipe has been twisted a little here.


4 Chicken drumsticks 

Marinate the Chicken with:
1 tsp clove powder
1 tbsp nutmeg powder
1 tbsp coriander powder
1 tbsp celery powder
1 tsp paprika powder (optional)
1 garlic (pounded)
1 onion (pounded)
salt and sugar to taste

some honey (for brushing)

** Preheat the oven at 220'C
** Grilled the drumsticks till golden brown on both sides (about 25-30 mins) then brush a little honey over the crispy skin and continue to grill for another 5 minutes.


I've bought some beautiful sweet Honey Cherry Tomatoes and some Japanese mushrooms (bunashimeiji & bunapi) for the side too.
With some olive oil, saute some chopped garlic till fragrant then add in the mushrooms and stir fry for about 5 minutes. Then add in some dried ground basil leaves, ground blackpepper and some salt to taste. Lastly add in the cherry tomatoes, off the heat and dish up.
Some mashed potatoes for the base of the crispy grill...YUMMY!

That's our dinner...Yay!!

Grilled Stuffed Squids served with Aglio Olio Linguine

I always have difficulties when comes to think what should I cook for dinner. My mind will be blank and I will keep staring at the stuffs I have in my fridge or I will go round and round the market hopefully I can get something that my whole family will like. And these were what I got from the market in less than 30 minutes...small fresh prawns, squids, fish, meat, few kinds of vegetables etc. Oh yes, I grabbed almost everything...LOL!!!
So then, here came something different for dinner last night! "At least it's not rice again" ...that's what my little girl commented..:p


Saw this (kind of) recipe on a TV series, and I was, okay..I'll make that! Well, not bad at all, they were all been walloped up! It's alittle messy when comes to clean up the squids, you know the kind of gooey and slippery all over the hands....but I enjoy rubbing them though...haha!


These are what you have to prepare....(enough for 4 persons)

(A) 8 medium squids (cleaned and remove skin, rubbed with little sea salt)
(B) 500g minced pork / chicken
      200g shrimps (shell removed~cut into small pieces)
(C) 200g Linguine
(D) 2 tbsps minced garlic
      a bowl of brocolli (cut)
      1 medium carrot (cut into small cubes)
      2 tbsps dried basil leaves
   a little black pepper & salt to taste
      3 tbsps olive oil

Marinate (B) for at least 2 hours with:
1 tbsp A1 sauce
1 tbsp Lea & Perrins sauce
2 tsps black pepper
1 tsp paprika powder
a little salt & sugar

Prepare some sauce for the grilled squids with:
2 tbsps A1 sauce
1 tbsp Lea & Perrin sauce
a little black pepper and sugar
~ mix well and put in microwave for 1 minute.
     

* When everything are nicely prepared, stuffed the squids with (B).
* Preheat oven at 225'C Rub a little olive oil on the stuffed squids and grill for 15 minutes until both sides turn yellowish. Dish up and cut into small ring size. (shown above)
* Bring the brocolli to boil and drain, keep aside.
* Saute the minced garlic till fragnant, add in carrots and stir fry for 5 minutes then add in brocolli and the rest of the ingredients from (D). Add alittle water if it's too dry. 
* Bring to boil a pot of water and cook the Linguine in 11-12 minutes until its totally softened. Drained.
* Mix in the cooked Linguine with the prepared vegetables and serve on a plate.
* Decorate (as you desire) the grilled stuffed squids on the plate and drizzle with some sauce.

Dinner is served!!!
It was so yummy and I regret I didn't cooked more..^^

Salted Paprika Grilled Chicken Wings

Hi....Gong Xi Fa Cai...恭喜发财,新年快乐!!!
Finally the school holidays for this CNY was over, and its back to my daily routine again. How I wish the holidays will be longer..maybe another week!!...LOL!! Well well...back to realistic!!
Okay, I know I've been missing for such a long time, you know...when holidays come, then I'll be busy with the holiday schedules...travelling and enjoying myself to the fullest instead in the kitchen..hehe! So I guess,I got to get back into my kitchen now and start all the recipes from my to-do-list!!!


Here, the Salted Paprika Grilled Chicken Wings for my buddies gathering last week ( potluck gathering). This was not the first time I'm making this recipe but just added some salted spice that my mom brought me. So if you like this recipe, do have a look at my 2009 December post!!
The only difference here was I added a tbsp of salted spice. Sorry no photos of the spice...I just forgot about it. But maybe you can google it..."Spice Bake Mix, 盐烤鸡粉"...from the brand "Haday,海天"...made from China..;p


This wings was so delicious, and my buddies love it so much. Oh maybe they already forgot the 2009 gathering which I made for them with drum sticks...haha!
Grilled for an hour with the oven at 250'C (30 minutes for the top then 30 minutes for the other side). Without spreading any oil or butter, the wings were so crispy and I think its alittle healthy than frying...huh!
The photos here were not that beautiful with my old camera taken, I think I should change my camera...haha! The wings colour were actually golden brown and look very tempting.

Have a try then you'll know what I mean....delicious and easy to prepare. There'll be more wings to come for this weekend gathering...haha! I'm still cracking my head what kind of flavour to marinate it....any idea?

Papprika Grilled Chicken

We are going to say goodbye to year 2009 in 1 day time. Well, its end of the year, and i find that i've done so little..:( Seems like alot and lots of things I want to do....lots of books i haven't read, lots of new recipes i haven't try....*sigh*..And i always asked myself.."what have I done lately"??
Not much!! That's my answer..;p
Have been looking for something to bake lately, and finally dicided to bake some bread for breakfast tomorrow. And guess what?! The whole afternoon, I have been waiting for my bread dough to rise....was wondering what's wrong with the dough after 2 hours of waiting. The dough doesn't rise an inch!! Then i read and read my recipe again, then i recall....I forgot about the yeast...OMG!! What am I doing?? My mind was wondering about something..but I don't really know what..haha! Really got to concentrate when I bake next time..;)

So end up I'll just post this "Grilled Chicken" today. I've cooked this for my gathering last weekend, and everybody loves it..:) This was the first grilled chicken that i create the marinate sauce myself. Try it out, maybe you'll like it!



Ingredients:
12 Chicken drumsticks or a whole chicken
1 clove garlic (finely chopped)
10 Shallots (finely chopped)
1 or 2 Onion (chopped)

Marinate sauce:
1/2 tbsp Salt (may need more if you wish a more salty taste)
2 tsps Ground black pepper
1 small bunch of Pasley (chopped)
1 Green Bell pepper (chopped)
A little orange peel
2-3 tbsps Papprika powder
1 tsp Red pepper
1 tbsp Oyster sauce
1-2 tbsps Water

Method:
~ Mixed all the marinate ingredients together.
~ Rubbed the washed and dried chicken with the marinate sauce thoroughly.
~ Leave to marinate at least 2 hours or more.
~ Preheat oven to 250'C and grill the chicken for 20 minutes or until cooked.
(Do not add any oil or honey, it will change the taste)


Garnished with some brocolli, cherry tomatoes and curly fries. Well, the colour do looks nice..:)

Peanuts and Trotter Stew

Last week, when we visited my inlaws back at our hometown (Seremban), my mother-in-law gave me a big grilled trotter and some grilled pork. Those were so fresh and the skins were so crispy. Cooked some of it last 2 days, but i still have quite alot amount resting in my frezzer.
So here is it.....Trotter Stew with Peanuts. My mother used to cook this quite some time ago, and i remember the sauce and the meat really goes along well with some streamed white rice.
So then, called my mum! Got the recipe and get started.....



Besides the peanuts, mushrooms were added. When stewing this dish, my whole kitchen was filled with the wonderful aroma...:) Already feel hungry.....hee hee!
The amount i cooked is more than enough for my dear friends to try...hope they like it!

Here's the recipe..

1 no (about 1-1.5kg) Front Trotter (i used grilled ones)
10 Black mushrooms (soak with alittle sugar, so it will soften faster)
6-8 cloves Garlic (whole)
1 small bowl of (raw) Peanuts (soak overnight)

Seasoning:
a little light soy sauce
1 tbsp Oyster sauce
1-2 tsps Sugar
a little salt (optional)

1-2 bowl of water
alittle constarch + water ( to thicken the sauce at the end)

Method:
~ Saute the garlic and peanuts for about 5 minutes, then add in the rest of the ingredients.
~ Stir -fry awhile then add in all the seasoning. (the salt may be avoided if its salty enough)
~ Then add in 1 small bowl of water first, bring to boil.
~ Slower the fire and stew for 1-2 hours until te peanuts and meat tender and soft.
( water may need to add again while stewing.)
~ Stir once awhlie every 30 mins of stewing.
~Lastly when its cooked, add some cornstarch to thicken the sauce.

Merry X'mas....My Roasted Turkey

Hi all....I've been missing for along time and I hardly bake when I got back..;p I had a wonderful holiday and how I wish it'll be longer. Another week, and I'm back to reality...haha! Back to my daily routine...boring..;p Well, hopefully I have a wonderful year ahead and I'll like to wish everyone has a wonderful 2012 too...:)


Okay, here's my post, I think it's the only post in December...hehe! Its roasted turkey for tonight's X'mas Eve gathering with my dear dear friends. This is my first attempt of roasting a turkey and it was done mainly with my own version of taste. Hopefully everyone will like it tonight...;p


Looks alittle burned huh...LOL!! My silly oven or silly me?? I'm not too sure. Anyway it does look alittle tempting right...hahaha! Garnished with some greens (broccoli) and yellows (baby potatoes) so it doesn't look that dull.
Here's the recipe of mine.....
1 turkey (about 14 pound)
Marinate with...alittle minced garlic, salt, black pepper & paprika for at least 3 days so that the meat will absorb the marinated ingredients well.

For stuffing:
2 large onions (sliced)
2 celery ribs (chopped)
some fresh mushrooms (sliced)
1/2 cup fresh parsley (finely chopped)
some chicken broth
4 slices bread (cut into small cubes)
1 tsp salt
1 tbsp chicken seasoning
1/2 tsp black pepper
** Butter for saute the ingredients above.
** Some melted butter for rubbing the turkey.

Method:
~ Saute onion, celery, parsley and mushrooms with butter until tender.
~ Add in chicken broth and seasoning, mix well. ( Add the chicken broth slowly, so that it won't be too watery)
~ Add in bread cubes and mix well.
~ Stir in enough chicken broth to reach desire moistness.
~ Stuff into turkey and place remaining stuffing ingredients outside turkey.
~ Place on tray (breast side up), rubbed with melted butter.
~ Preheat oven at 250'C at grilled and grill the turkey uncovered for 2-3 hours until meat tender. Cover the top with aluminium foil if turkey turns brown too quickly.
~ Grilled additional for 40 minutes (covered with aluminium foil)
~ Turn the oven to "bake" at 200'C, (uncovered) further baked for another 10 minutes or until well cooked.
~ Pour out the pan drippings and thicken it with some cornstarch for gravy.

Grilled pork (Char siu) buns / Chicken Curry buns

Buns again! But this time with salty fillings. The result??...Of course very nice!...;p
Wanted to make these quite some time ago, but due to the Raya holiday last week, the plan has been postpone and postpone. Well, i did alittle of baking last few days during the holiday. Yup...those mooncakes for my family, relatives and close friends. Not the classic mooncakes, but the "Shanghai" flaky mooncakes. Photos? Sorry, no photos here cause it was posted quite sometime early this year. Anyway the recipes is from my friend, honeybeesweets. Anyone interested in the mooncakes, can view from her blog.

Okay, back to my buns here..;)
The recipe for the dough is from my previous red bean buns. I used exactly the same amount of ingredients here. For the fillings.. Grilled Pork (Char Siu) was also from my previous post. I just added alittle more water to pan-fry the Char Siu (cut into small chunks) .
The Chicken Curry filling.......




Ingredients (Chicken Curry filling):

1 chicken breast (cut into small chunks)
1 large potato ( cut into small cubes)
5-6 Shallots ( minced)
2-3 Garlic (minced)
1 large Onion ( cut into small cubes)
2 tbsps Meat curry powder
1 tsp Sugar
Alittle salt to taste
3-4 tbsps of water

Method:
* Marinate the chicken with the 2 tbsps of curry powder for about 30 minutes.
* Saute the shallots and garlic with alittle oil until fragnant (alittle brown)
* Add in the onion and potato, continue to stir fry until fragnant, then add in the chicken.
* Mix well, then add in the sugar, salt and water. Continue to stir in medium fire.
(Water can be added if its too dry)
* When the potato turned soft, and the chicken cooked, leave it to cool before wrapping.



A few white sesame and almond flakes to deco on top of the buns, this is to differentiate the buns with different fillings. I took 1 each right after baked...;p Just can't wait to try it out!
Love it!

I made 2 portions of the bread dough today...why? I cannot just eat it by myself ha....hee hee!
Shared some with my dear friends just now. They also like it..:) When someone says good to your creations, that is the most happiest moment...agree?
With some left over dough i have, i made some "original" recipe...Red Bean Buns! Well, that's my daughter's favourite though..:) The Char siu buns is highly recommended here, have a try and let me know!

Pork & Shrimps Satay with Tamarind Glaze

Hi all, I'm back with a simple recipe which its well received by my family and friends. Last weekend we had a small gathering with friends at my house. I've prepared some grilled chicken wings with lemon grass, grilled prawns, some desserts like blueberry cheese tarts and tiramisu. Well, this satay was the most welcome dish during that day. All were gone before the gathering ends..haha! I'll make more for the next one ya...^^


The recipe only needs few ingredients:
600g minced pork
100g minced shrimps
1 tsp ginger powder
3 small pcs galangal (chopped0
15 stalks lemongrass (wash & clean)
1 gloves garlic
50g coriander leaves
1 tsp ground tumeric
1 tsp freshly ground black pepper

Glaze:
1 tbsp tamarind puree
1 tbsp honey
ground black pepper to taste


Method:
- Place all ingredients except lemon grass stalks, meat, shrimps and glaze in a blender and pulse until combined.
- Mix the blended ingredients with the meat and shrimps. Mix well and leave to marinate for 1 hour.
- With wet hands, mould each portion around each lemon grass stalks into shape of a sausage (about 3-4") long. (like the picture shown above)
- Prepare the glaze. Preheat and overhead grill.
-Brush satay with glaze and grill, turning every 3 minutes until well cooked / browned. Takes about 8-10 minutes to cook. Serve hot!


For outdoor cooking, grill over medium-hot coal. It may taste better with the coal grill.
This was so nice and everyone started to ask for the ingredients, so here you are my dear friends. Sorry to take such along time to post...hehe!

A Fine Dining ~ Coco Tei Tokyo Japanese Cuisine

I was at this classy Japanese restaurant 2 days ago accompanying my husband for a bussiness dinner.
This was my first time there, and I'm so lucky that I have a chance to try out the most authentic and delicious Japanese food I've ever try.
The entrance and the enviroment of this restaurant gave me a feeling that I'm going to enjoy the dinner without any hesitation! And yes, I'm right, no regret at all!! Well, it was alittle pricey but it really worth it..:)
Let me show you why it is so special...................

The entrance.....
The costumers there are mostly VIP or under reservation, they seldom take in walk-in costumers. Then the chefs will make sure you'll never have the repeat menu as your last visit! Yes, they do record what you ate!! Specical??...Then you may ask do they have such a long menu??....Ah that's the point! The owner will invite a special guest, a retired Japanese chef from Japan, to train and test out the menu there. Then he'll also create some nice, special, delicious dishes into the menu before he left!!
I'm not so sure how's the menu looks like because I didn't get the chance to peep into it.....and our dinner just started without it!! As I said the chef already knows what he's going to serve us!! From appetizer till the end of the dessert...it was so fullfilling!!

My 1st dish.....the Fruit Salad.

...then came the Sashimi.....so fresh!!

Oh..it was served with their fresh Wasabi, which I never tried before..:)

Then, the Cabbage Rolled Soup...with a tomoato heart...so beautifully served!

Then follow by...Senzai San Tei ( a 3 combination main dish)....from the left, the Japanese chives with sesame, then the cow's tougue and follow by a homemade Japanese toufu.

Then the Inari Rolls....


The fried prawns...(pardon me for I've forgotten the name given to this dish)

Baby Sardine served with Japanese mayonaise....this was so good and crispy!!

Then it ends with the Grilled Maki....and some ice cream which I didn't take. I was too full by then...;p

Pardon me with the bad photography here which I've taken with my phone. And another reason with so many people waiting for me to take the pictures of every dish before they can start...opps! Really feel bad....heehee!! Truly I don't know how much was the dinner cost, but roughly it was around rm200-300 per person I guess. But it doesn't matter if the food served was really good right?!....;p

Hope to visit this restaurant again soon, then I'll see what I'll get from their menu again..:))

What Ive Done Lately!

Hi! How are everyone doing lately? Me?!...Very busy since my daughter's school starts but of course I do cook and bake everyday. What I've been cooking? Here are some of them, something simple but delicious for my family. Well, of course there are some more but those are the repeat recipes which I've posted before so I'm not going to repost them.
I'm having a very important mission to complete this coming week. I'll let you know what it is later..hehe!
I'll make this post as short as possible, hope that you still enjoy reading it..:p

Here, the 1st one...saw this from a tv show once that a taiwanese cook did something with the chicken breast and I find that was interesting. With some changes, well actually I did change the whole idea except wrapping with the chicken breast. Flatten the chicken breast and marinated with some salt, paprika powder and black pepper then wrapped with anything that you desire ( I stuffed with some brinjals, carrots and cheddar cheese) Rolled them up and sealed with toothpicks. Then grilled at 250'C until done (about 20-30 mins) Removed the toothpicks and sliced. Served with some garden salad. Yummy!


Next, the roasted pork which is my family favourite. This is a super delicious and easiest recipe for roasted pork I ever done. get the recipe here.


Deep fried Spring Rolls! What a sinful snacks for my afternoon tea. using only the frozen spring rolls wraps that I got from the supermarket, the yummilicious fillings that I invented myself..haha! Nice!!
Fillings are minced shallots,turnips (thinly sliced), carrots (thinly sliced) and dried beancurd (thinly sliced). Stirfry the shallots till fragrant, then add in the rest of the ingredients and mix well. Add seasoning~ oyster sauce, sugar and pepper. (amount depends to individual) Slowly add in water until there is a small amount of gravy will do. Slow cook till the vege softened. Wrapped with the psring roll wraps and deep fry until golden brown.


Another old recipe here, the chiffon cake. Well this time I did 2 flavors in a cake because my daughter has been asking for chocolate flavor and me, I like the orange one. so at the end, I combined both!!Do look for the chiffon cake recipe from my blog here for details.


Lastly but not least, remember I mentioned earlier that I have a very important mission? Here's the roses that I wanted to show you. Chocolate fondant roses all done for a wedding cake next week!! I'm very satisfied with the roses here after so long that I didn't practice making them. Not bad huh?..hehe!
They are for my dear cousin's sister's wedding next week. So stay tune for the cake ya...^^

My Grandmama's Birthday

What a weekend!! We had a wonderful time celebrating my grandmother's birthday last Saturday, although not all the members of the family attented..;p Well, what I mean "we" were my grandmother's daughters and their children. Uncles?...They will have their turns celebrate with grandma soon...haha!
Okay, since I'm going to share with you all the foods taken from the restaurant, I don't want to make this post too long...;p

First of all...this was the cake made by my sister and me..:) Actually my sis did most of the job..;p Want the recipe, click here...:) Me will show you the steps here...





And then a small cake for the kids....without alcohol & coffee...but aaaaa...abit ugly..haha!


These were the foods we had for our dinner. A wonderful and yummilicious one and it only costs us RM450++. Cheap!!

1st....The "Four Season" appetizer.... with a combo of yam basket with chicken, crabs, squids & special fish balls.

These were the special fishballs I mentioned....

2nd, Charcoal Grilled Chicken in a pot................


3rd, Sharkfin soup....

4th, Steamed "Patin" fish...................


5th, Thai-style Buttermilk Prawns.................

6th, this was special....Stirfry Pumpkin and Lotus with Mixed Vege. And it was top with crispy cuttlefish.


7th, Red Wine Trotter..............
8th, XO Fried Rice with dried shrimps and Chili............

9th, fried mee....
Desserts..........Soft Mochi with Redbean fillings.....

Lastly...Glutinous Rice balls with black sesame fillings in Redbean soup.

Tempting? Yea...we will definetely go back to this restaurant soon, very soon...;D
